JAMBALAYA CAJUN 
2 c. zucchini, cubed
2 med. tomatoes, chopped
1 sm. onion, chopped
1 green pepper, cut in 1 inch strips
2 tbsp. olive oil
1/4 c. Picante sauce
1 tsp. parsley flakes
1 tbsp. vinegar
Salt and pepper to taste

Fry chopped onion in olive oil. Add remaining ingredients and simmer covered until zucchini is tender.

This is good as a soup or cook off some of the juice and serve over rice.
