JAMBALAYA WITH CHICKEN 
4 chicken breasts, cut up
1 lb. smoked sausage, cut
1 lb. shrimp (optional)
1 tbsp. cooking oil
4 cloves garlic, minced
1/2 lg. green pepper, chop fine
1 can tomato sauce
1 tsp. thyme
1 tsp. parsley
2 dashes red cayenne
Salt and pepper
Worcestershire sauce, to taste
2 c. hot water
2 c. cooked rice
1 bay leaf

Saute chicken in oil. When almost done, add sausage and continue cooking until chicken is cooked. Remove chicken and sausage. To that pan add garlic, onion, green pepper and cook until vegetables are soft. Add tomato sauce; simmer for 5 minutes. Add all spices, hot water and cooked rice. Put in meats; cook covered until dry. When almost done, put bay leaf in and simmer 5 minutes more. Remove bay leaf and serve.
