CALVIN'S CAJUN BROWN GRAVY AND
CHICKEN
 
1 hen, cut up (or pork, cut in 1 1/2-inch cubes)
1 c. oil
Salt, red and black pepper (to taste)

Brown chicken in heavy pot with 1 cup oil. Remove meat after it browns and add: 1 lg. bell pepper, chopped 7-8 med. potatoes, peeled 2 cans mushroom gravy

Saute onions and bell pepper. Add mushroom gravy; potatoes, and meat. Add water to just cover meat. Simmer 1 1/2 hours or until meat is tender. If gravy is too thin, add cornstarch and/or flour until the desired thickness. Serve over rice.
