CAROL'S POTATO SALAD 
6-8 potatoes
4-5 slices bacon
4 green onions
1/2 c. celery
1/3 - 1/2 c. mayonnaise
1/6 - 1/4 c. mustard
2 tbsp. red wine vinegar
2 hard boiled eggs
1-2 tsp. salt
1/2 tsp. pepper
2 tbsp. bacon grease

Boil potatoes with jackets on until done, about 1 hour. Fry bacon. When 1/2 done, add chopped green onions and finish cooking. Crumble bacon.

Peel potatoes, slice eggs, add other ingredients. Mix. Check seasoning.
