CREAM OF BROCCOLI SOUP 
6 tbsp. butter
1/2 c. flour
1 c. chicken broth (I use College Inn)
2 c. milk
1/2 c. half and half cream
1 tbsp. onion, chopped
Salt to taste
10 oz. broccoli (fresh) or desired amount

In a 2 quart saucepan make a smooth paste from butter and flour. Add chicken broth, milk, cream, onion, salt, and broccoli. Cook and stir on low heat until it becomes creamy and smooth. Don't let it boil, the cream will curdle.
