CREPES 
5 eggs
2 tbsp. sugar
1 1/2 c. flour
2 1/2 c. milk
24 oz. Farmers cheese (or Ricotta or cottage cheese)
2 eggs
1 tbsp. butter
2 tbsp. sugar
1/3 c. raisins
Apricots or other dried fruit cut up (optional)
Sour cream or jelly (optional)

Beat 5 eggs; add 2 tablespoons sugar, flour and milk; mix.

FILLING:

Use cheese cloth to squeeze out milk from cheese. Add 2 eggs, 1 tablespoon butter, 2 tablespoon sugar and raisins or other dried fruit. Cook crepes and stuff. Can serve with a dollop of sour cream or jelly (optional).
