CHEESE BLINTZES 
2 (8 oz.) pkgs. cream cheese
1/2 c. sugar
2 egg yolks
2 loaves white sandwich bread
2 sticks butter (melted)
1 c. sugar
4 tsp. cinnamon

Soften cream cheese. Add sugar and egg yolks; mix. Trim crusts off bread (4 at a time). Roll each slice flat with rolling pin. Spread cheese mixture on bread and roll up. Dip into melted butter. Roll in cinnamon and sugar mixture.

Bake at 400 degrees for 8 minutes and turn over, baking 8 minutes more. Can be frozen before they are baked. If frozen, bake 10 minutes on each side.
