MINI CHEESE BLINTZES | |
2 (8 oz.) pkgs. cream cheese, room temp. 1/2 c. sugar 2 egg yolks 2 (1 lb.) loaves thin sliced white bread, crusts trimmed 1 c. butter, melted Cinnamon & sugar Sour cream Strawberry preserves Combine cream cheese, sugar and yolks in mixing bowl and beat until smooth. Flatten each slice of bread with rolling pin and spread with some of the cream cheese mixture. Roll jelly roll fashion and dip into melted butter. Sprinkle with cinnamon and sugar to taste. If preparing ahead place in single layer and freeze. Transfer to plastic bags when frozen. When ready to serve, preheat oven to 400 degrees. Place on baking sheet. Bake until light golden brown. (Fresh 8 to 10 minutes; frozen 10 to 15 minutes.) Serve hot with sour cream and preserves. |
