MOCK CHEESE BLINTZES 
3/4 lb. cream cheese (1 and 1/2 oz. pkg.)
1 egg yolk
1/2 tsp. vanilla
1/2 lb. butter
1 c. sugar and cinnamon mixture
1 pt. sour cream for dipping
1 loaf (lg.) white bread

1. Cream together cheese, vanilla and egg yolk.

2. Cut crusts from bread.

3. Roll white bread with rolling pin.

4. Spread cheese on bread and roll it up firmly. Seal ends.

5. Cut in 3rds.

6. Dip in melted butter and roll in sugar mixture.

7. Bake at 350 degrees 20 minutes on cookie sheet and cover with foil.

8. Remove foil last 5 minutes.

Can be made ahead of time and frozen.
