CHEESE POTATO CAKES 
2 c. seasoned, mashed potatoes
2 tbsp. minced onion
1 tbsp. chopped parsley
1 tbsp. chopped chives
1 beaten egg
1/2 c. shredded Cheddar cheese

Combine all ingredients. With lightly floured hands, form into 6 cakes about 1/2 inch thick. Dip in flour and fry in a small amount of hot oil until golden brown on both sides.
