CARROTS AU NATURALE 
1 lb. peeled, shredded carrots
3 tbsp. butter
1/4 tsp. apple pie spice
Salt and pepper to taste

Shred carrots into fine strips. Heat butter in a heavy skillet to "hot", toss carrots in, adding apple pie spice, and sprinkling salt and pepper to taste. Stir-fry them until they start to wilt slightly (this should take about 4-5 minutes over high heat). Remove from fire and stir carrots once more. Cover pan and let dish "set" for 10 minutes.
