FRYING PAN OMELET 
Ham cubes, crumbled bacon or leftover meat of your choice
5-6 eggs + 1/8 c. water
Med. onion, diced
2 ribs celery, cut fine
1 - 1 1/2 c. Mozzarella cheese
Salt and pepper to taste
2 tsp. butter

In 10 inch frying pan, saute onions and celery in butter until tender. Add meat choice and spread in an even layer in pan.

Beat eggs well with water; add salt and pepper. Pour over mixture in frying pan and cook over low to medium heat. Sprinkle shredded Mozzarella cheese over top, the amount depends on your personal taste. A lid can be used to hasten the cooking (too high a heat will burn the bottom and toughen the eggs).

When eggs are nearly set, place under a medium heat broiler to brown the top. (Watch closely!) Serves 3. Serve with toast or toasted English muffins.
