SWEET POTATO MUFFINS 
1 3/4 c. flour
1/4 c. sugar
1 tbsp. baking powder
1 tbsp. brown sugar
1 tsp. salt
1/2 c. chopped nuts
1 1/4 c. mashed sweet potatoes
3/4 c. milk
1/4 c. butter, melted
2 eggs, slightly beaten
1/4 c. sugar
1/2 tsp. cinnamon

Combine first 6 ingredients into large bowl. Stir well. Make well in center. Combine next 4 ingredients. Stir well. Add to dry ingredients and mix until moistened. Spoon batter into greased muffin pan. Fill 2/3 full. Combine 1/4 cup sugar and cinnamon. Sprinkle over each muffin. Bake 425 degrees for 25 minutes. 1 1/3 dozen muffins.
