SWEET POTATO MUFFINS 
1 3/4 c. sifted all-purpose flour
1 tsp. baking powder
1/4 tsp. salt
2 lg. eggs, lightly beaten
3/4 c. milk
1 3/4 c. mashed sweet potatoes
1/4 c. butter
2 tbsp. brown sugar, packed
1/2 tsp. cinnamon
1/2 c. coarsely chopped walnuts

Heat oven to 425 degrees. In medium bowl, sift together flour, baking powder and salt. In another bowl mix remaining ingredients until well blended. Add to dry ingredients, mixing until dry ingredients are moistened. Lightly coat muffin tins with butter. Fill about 3/4 full with batter. Bake 20-25 minutes or until brown.
