RICE AND PEA AND TOMATO SALAD 
3 c. rice, cooked
10 oz. peas, cooked
4 1/2 oz. olives, chopped
1/3 c. vinaigrette (any oil and vinegar dressing)
2 tsp. dried basil
Cherry tomatoes
Lettuce

Combine rice and peas and olives. Mix in dressing and basil. Bed in lettuce and garnish with tomatoes.
