10 lb. trimmed lean meat, ground 2 inches purchased pork fat, ground 6 1/2 tbsp. salt 6 tsp. pepper 1 1/2 tsp. saltpetre Mix well and stuff into casings. Tie at 8-10 inch lengths. Marinate meat at your own discretion. Poach in water - cover for 45 minutes. |
