TURKEY POCKETS AL GRECO | |
1 tbsp. vegetable oil 1 lb. ground turkey 1 c. finely chopped onion 1 clove chopped garlic or 1/2 tsp. garlic powder 1 tbsp. dried parsley 1 tsp. dried oregano 8 mini pita bread (3 inches in diameter), warmed 1 c. chopped tomato 1 c. peeled and thinly sliced cucumber 2 oz. feta cheese Over medium-high heat, add oil to medium-size skillet (or spray with non-stick spray). Saute ground turkey, 1/2 cup onions and garlic until meat loses pink color, about 5 minutes. Stir in parsley and oregano. Cook 1 to 2 minutes. Trim about 1/2 inch off top of each pita. Spoon meat mixture into each pita. Top with remaining onion, tomatoes, cucumber and feta cheese. Serves 8. Per serving: calories 156; grams fat 6; milligrams sodium 172; milligrams cholesterol 42. |
