SPARERIBS AND SAUERKRAUT SOUP | |
3 lbs. spareribs 4 qt. water 1/2 lb. dry baby lima beans 3 tsp. salt 1 med. onion, diced 4 carrots, sliced 2 stalks celery, diced 2 med. potatoes, cubed 1 (27 oz.) can sauerkraut 4 tbsp. butter 4 tbsp. flour Cook spareribs. Add beans, onions, celery and carrots. Cook until beans are soft. Add potatoes and cook until potatoes are soft but firm. Add sauerkraut which has been rinsed once and boiled 30 minutes. Brown flour in butter until light brown. Gradually add about 1 cup water, stirring constantly and boil until smooth. Add to soup and boil 15 minutes more. |
