AUNT BETTY'S GOLDEN CHRISTMAS
BREAD
 
3 beaten eggs
1/2 c. cooking oil
1/2 c. milk
2 1/2 c. sifted all-purpose flour
1 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
2 c. shredded carrots
1 c. chopped maraschino cherries
1 c. raisins
1 c. chopped pecans

Combine beaten eggs, oil and milk. In large bowl, sift together flour, sugar, baking powder, soda, cinnamon and salt. Add egg mixture. Mix just until thoroughly combined. Stir in carrots, cherries, raisins and pecans. Turn into well greased and floured 9x5x3 loaf pan. Bake 350 degrees for 45-50 minutes. Remove from pan and cool thoroughly. Wrap and refrigerate overnight or until used. Makes 4 small loaves or 1 large.
