CREAMED SPINACH 
1 pkg. frozen spinach (or equal amount of fresh)
1 med. onion, finely chopped
3 tbsp. butter, melted
2 1/2 tbsp. flour
1/2 to 1 c. milk (just pour in until it looks good-consistency)
Salt and pepper to taste
1/4 tsp. nutmeg

Cook spinach until tender - drain. Saute onion in butter, then blend in flour. Gradually add milk and cook until mixture thickens. Add spinach, salt, pepper and nutmeg. Blend in blender and serve. Serves 4.
