ITALIAN SAUSAGE & PEPPERS 
2 lbs. Italian sausage
6 med. potatoes, sliced quite thick
3 onions, sliced
3 green or red peppers or a combination
Basil, oregano & parsley to taste
Salt sparingly & pepper

In the oven in a 10 x 15 inch pan, place sausage links, onions, potatoes and peppers. Puncture sausages. Cook at 375 degrees until done. Covering the pan speeds cooking but should be uncovered for last part of cooking time. Stir frequently.

On the stove top in a large skillet place sausage with a small amount of water and cool until water is gone. Prick sausages to let fat escape. Add potatoes, onions, peppers and seasonings. Cook over a low flame, stirring often until potatoes are done.

NOTE: To either of these a small amount of canned tomatoes can be added while cooking.
