SAUSAGE WITH PEPPERS AND ONIONS 
2 lb. sausage
1 yellow onion, large
1 green pepper
salt
pepper
oregano to taste

Slice onion into rings and green pepper into thin slices. Cook sausage on low flame for about 30 minutes. Add onions, green pepper, salt, pepper and oregano until vegetables are soft.

Can be served on open face sandwich or on a sandwich roll.
