SOUTHERN FRIED CHICKEN 
1 broiler chicken, cut up
1 c. flour
1 egg
1/4 c. milk
1 1/2 c. seasoned bread crumbs
1 tbsp. oil
Paprika for dusting top
Pepper for dusting top
Salt, to taste (opt.)
1/2 c. butter
Sm. bits onion
Sm. bits garlic

Wash chicken and pat dry with paper towel. On waxed paper, dredge each piece of chicken with flour. Heat 1 tablespoon oil in a shallow 9 1/2 x 12 1/2 inch baking pan.

In a shallow dish, beat egg and blend in milk. dip floured chicken pieces in egg and milk mixture; cover with seasoned bread crumbs.

Lay chicken pieces in hot oiled baking pan; sprinkle with paprika and pepper. Add salt, if used. Drop small bits of onion and garlic between chicken pieces. Bake at 375 degrees for 45 to 60 minutes or until brown and done.
