CREAMY RICE PUDDING 
4 cups homogenized milk (don't use low fat)
1/2 cup Arborio rice
1/4 tsp. salt
1/3 cup sugar
1/3 cup raisins (opt)
1 tsp. vanilla extract

Add first four ingredients to saucepan. Bring just to a boil, stirring constantly. Immediately lower heat to very low and add raisins if using. Simmer, covered for 50 minutes, stirring occasionally. Rice will be very tender and slightly thickened. It will look soupy while hot but will thicken as it cools.

Stir in vanilla. Let sit 20minutes without stirring.

Serve warm or chilled, sprinkle with cinnamon in desired. YUM!
