DOUGHNUT MUFFINS 
1 egg, slightly beaten
1/3 c. oil
1/2 c. milk
1 tsp. vanilla
1 tsp. lemon extract
1 1/2 c. sifted all purpose flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1 tsp. nutmeg
3 tbsp. sugar for topping
1/4 tsp. cinnamon

In a mixing bowl, beat egg slightly with a fork; mix in the oil, milk and vanilla and lemon. Mix and sift together flour, sugar, baking powder, salt and nutmeg. Add these dry ingredients to egg mixture, again using the fork for mixing. Spoon mixture into greased cupcake pans. Mix 3 tablespoons of sugar with cinnamon and sprinkle lightly over muffin batter. Top each muffin with a tiny piece of butter. Bake at 400 degrees for about 15 minutes. Muffins in regular muffin pans will probably need 20 minutes.
