ALMOND COOKIES 
2 3/4 c. flour
1/2 tsp. baking soda
2 eggs, lightly beaten
1 c. butter, cut into small pieces
1 c. sugar
1/4 tsp. salt
2 tsp. almond extract
20 to 30 almonds

Mix dry ingredients, cut in butter, will be crumbly, stir in eggs and extract. Roll between floured palms into 1 inch balls. Place almond in centers. Bake 15 to 20 minutes in 350 degree oven.
