EASY CHICKEN CACCIATORA 
3 - 3 1/2 lb. frying chicken
1 med. clove garlic
1 - 1 1/2 c. sliced mushrooms
2 cans stewed tomatoes
2 tbsp. olive oil
1 tsp. oregano, crumbled

Brown chicken in olive oil with clove of garlic. Before turning chicken, sprinkle with oregano, salt and pepper. Remove garlic. Add mushrooms; brown lightly. Add stewed tomatoes, cover and simmer for 30 minutes. Uncover, continue cooking until sauce is reduced to desired consistency and chicken is very tender. Good with spaghetti or rice. Serves 4 to 5.
