ITALIAN-STYLE SUMMER VEGETABLES 
6 sm. zucchini, cubed
4 med. potatoes, peeled and cubed
3 med. onions, chopped
8 Italian sweet green peppers, cleaned and cut into pieces
6 med. to lg. red tomatoes, peeled and chopped
3 fresh garlic cloves, minced
Bunch fresh parsley and basil
Cooking oil
Salt and pepper

In a large skillet, add 3 tablespoons cooking oil, zucchini, potatoes, onions, peppers, garlic, salt and pepper. Fry until vegetables are browned. Add tomatoes, basil and parsley and simmer covered until vegetables are tender.
