STUFFED GREEN PEPPERS 
4 lg. green peppers
1 lb. ground beef
1/4 c. vegetable oil
1/2 tsp. salt
1/4 tsp. pepper
2/3 c. cooked rice
1 1/2 c. tomatoes, sieved
1/4 c. minced onion
1/2 tsp. salt
1/4 c. water
1/4 tsp. pepper, black
1 c. grated cheese

Grease a 2 quart baking dish. Rinse peppers. Cut a thin slice from the stem of each green pepper and remove inner white fiber and seeds. Rinse cavity. Drop peppers in boiling salted water to cover. Simmer 5 minutes. Remove and set aside to drain. Brown ground beef in oil. Stir in salt, pepper, and cooked rice. Lightly fill pepper shells with the mixture, heaping slightly. Place in a baking dish. Combine tomatoes, onion, salt, water, and black pepper. Mix well. Put in pepper shells. Put cheese on top. Bake at 350 degrees for 30 minutes.
