HAM AND SWEET POTATOES | |
1 lb. ham slice 1 (16 oz.) can sweet potatoes 4 slices pineapple in own juice (pineapple chunks work just as well) 4 tsp. butter 4 tsp. brown sugar 4 sheets heavy duty aluminum foil (or double layers of regular foil) Place one quarter of the ham slice on each piece of foil. Divide the pineapple slice and sweet potatoes among the packages. Dot each package with 1 teaspoon butter and sprinkle with teaspoon brown sugar. Add 2 tablespoons pineapple juice to each. Seal edges of the foil. Bake at 350 degrees for 1/2 hour or place over coals for 1/2 hour, turning every 10 minutes. If you don't need all four, or want to make some up in advance, freeze the remainder and cook at a later time at 350 degrees for 1 hour. |
