MOLASSES AND RAISIN SPICE
COOKIES
 
1 1/2 c. raisins
3/4 c. shortening
1 c. plus 3 tbsp. sugar
1 egg
1/4 c. molasses
2 1/4 c. sifted flour
2 tsp. baking soda
1 tsp. salt
1 tsp. ground ginger
1/2 tsp. cinnamon
1/4 tsp. ground cloves

In a large bowl, beat shortening until creamy. Gradually beat in 1 cup sugar. Beat until light and fluffy. Add egg. Beat until blended. Blend in molasses. Sift flour with soda, salt and spices. Gradually beat in flour mixture. Mix in raisins. Turn dough onto a sheet of plastic wrap. Refrigerate 1 to 2 hours or overnight. Preheat oven to 375 degrees. Grease cookie sheets. Shape dough into 1 1/4 inch balls. Roll in remaining sugar. Place on cookie sheet 2 inches apart. Bake for 10 to 12 minutes.
