HAM DINNER SALAD 
Servings: About 6. Preparation time: About 35 minutes. Cooking time: About 45 minutes. Standing time: About 1 hour. Chilling time: About 1 hour.

3 lg. yams or sweet potatoes, cooked, peeled and cut in 1/2 inch cubes
3 navel oranges, peeled and sectioned
2 c. thinly sliced celery
3 c. diced smoked ham
1 (8 oz.) can jellied cranberry sauce, cut into 1/2 inch cubes
1/2 c. vegetable oil
1/2 c. orange juice
2 tsp. sugar
1 tsp. salt
1/4 tsp. pepper
Lettuce leaves

In large bowl, combine sweet potatoes, orange sections, celery and ham; add cranberry sauce and toss gently to mix. Cover and chill at least 1 hour. In small bowl, beat oil, orange juice, sugar, salt and pepper until thick and well blended; let stand at room temperature at least 1 hour. Line salad bowl with lettuce leaves; spoon in ham mixture. Stir salad dressing well and pour over salad. Serve immediately.
