LENTIL SOUP 
2 c. dry lentils
4 (10 oz.) cans beef broth
2 lg. onions, peeled & chopped
2 tbsp. butter
3 sprigs parsley
1 tsp. thyme or bay leaf
Salt & pepper to taste
6 hot dogs, cooked & thinly sliced

Wash lentils. Cover with cold water and soak overnight. Discard water. Place lentils in large pot. Add beef broth and water. Simmer about 1 1/2 hours. Saute onions in butter until golden. Add onions to soup. Add parsley, thyme and bay leaf. Season with salt and pepper. Simmer 1/2 hour longer. Add sliced hot dogs and serve. Enjoy!
