GREEN BEAN CASSEROLE 
1/2 c. chopped onion
3 tbsp. butter
2 tbsp. flour
1 tsp. salt
1/2 tsp. pepper
1 tsp. lemon rind
1 c. sour cream
5 c. green beans, cooked
1 (3 oz.) can Chinese noodles

Brown onion in 2 tablespoons butter. Add flour, salt, pepper and lemon rind. Mix well and add sour cream. Cook beans 30 minutes in a small amount of water. Drain (save liquid to use in soup).

Combine all ingredients except noodles and remaining butter in greased 2-quart baking dish. Top with noodles and dot with butter. Bake uncovered in 350 degree oven 30 minutes. Serves 6-8.
