WHOLE WHEAT BANANA BREAD 
2 c. whole wheat flour
1 tsp. baking soda
1/2 c. oil
1/2 c. honey
1 grated lemon rind
2 beaten eggs
2 c. banana pulp
1/4 tsp. salt
1/2 c. chopped nuts
1/2 c. raisins (optional)

Sift together flour and baking soda. Mix oil, honey and lemon rind until smooth. Beat in eggs. Add sifted ingredients in 3 equal parts alternating with banana pulp, beating until smooth after each addition. Fold in nuts. Place in large greased loaf pan. Bake 50 minutes at 350 degrees or until toothpick comes out dry. Cool 5 minutes before removing from pan. Makes 1 large loaf.
