SOPAPILLAS 
3 c. sifted flour
1 tbsp. baking powder
1/2 tsp. salt
1 tbsp. shortening
1 c. water (approximate)

Sift dry ingredients and cut in shortening until mixture is fine. Make a well in the center of dry ingredients. Add water to dry ingredients and work into dough (should be stiff). Knead 15-20 times and let rest about 10 minutes.

Cut about 1/8-inch thick into squares and fry in hot fat (365 degrees) until they puff up and are golden brown. Drain well and serve with honey or dust with sugar-cinnamon mixture. Also can be stuffed with beans or meat for main dish.
