SWISS POTATO SOUP 
2 qts. chicken stock
1/2 lb. potatoes
4 oz. onion
4 oz. celery
1/4 c. rice
1 tbsp. salt
1/4 tsp. pepper
4 oz. cooked chicken

Bring your chicken stock to a boil. Strain. Add your chopped vegetables and rice. Simmer 1/2 hour. Makes 12 (8 ounce) portions.
