BROCCOLI POTATO SOUP 
1 small onion, chopped
1 pkg. frozen hash brown potatoes, diced
4 cups chicken broth
1 lb. broccoli, cut up
1 1/2 cups milk
1 tbsp. lemon juice
2 tsp. salt
1/2 tsp. pepper
1/4 tsp. ground nutmeg
swiss cheese, shredded

Place onion and hash browns in a 3-quart saucepan. Cover with chicken broth. Cover pan and simmer until tender, about 10 minutes. Add broccoli and simmer another 5 to 10 minutes. Stir in milk, lemon juice, salt, pepper and nutmeg. Heat until hot, about 5 minutes. Top with shredded swiss cheese.

Serves 8 to 10.
