SMOTHERED POTATO SURPRISE 
Great with steamed broccoli and buttermilk biscuits!

1 onion
1 green pepper
fresh mushrooms
smoked sausage
russet potatoes
1/4 cup vegetable oil
1/4 cup water
1/4 cup (1/2 stick) butter
Cajun seasoning or salt and pepper
shredded mild cheddar cheese (optional)

Chop onion and green pepper, place in bowl, add mushrooms. Cut smoked sausage in bite size pieces and sit to the side. Peel and cut potatoes (a little thicker than potato chips), place in bowl of cold water.

Heat non-stick skillet on medium with vegetable oil. When oil is hot, add the potatoes and seasoning to taste (potatoes should fry immediately so flip regularly).

Heat another skillet and add the smoked sausage, cook on low for about 5 minutes (constantly stirring). Once potatoes are golden brown, reduce heat to low, add 1/4 cup of water (to smother), then add 1/2 stick butter, onions, green peppers, mushrooms and smoked sausage. Stir and cover. Cook until potatoes are soft.

Sprinkle shredded cheese over potatoes, if desired. Let stand for 5 minutes before serving.
