TAFFY APPLE SALAD 
4 c. diced red apples (with skin on)
1/2 c. sugar
1 (8 oz.) can crushed pineapple (drain and save juice)
1 (8 oz.) Cool Whip
1 tbsp. flour
1 egg, beaten
2 tbsp. apple cider vinegar
1 c. salted peanuts

In small pan mix flour and sugar. Add egg and mix well. Add vinegar and pineapple juice. Cook over low heat until thick. Cool completely.

Combine apples, pineapple and peanuts in bowl. Pour cooked mixture over fruit and fold in Cool Whip. Let set. Best if made a day ahead.
