TACO CASSEROLE 
1 1/2 lbs. ground beef
1 sm. onion, chopped
1 can cream of mushroom soup
1 or 2 cans Ranch style beans or chili hot beans
1/2 c. sour cream
1 can Rotel tomatoes
Tostitos or any tortilla chips to cover bottom & top of casserole
1 c. grated cheddar cheese

Brown beef and onion; drain grease. Add mushroom soup, beans, sour cream and Rotel tomatoes. Mix together.

In a 9"x13" casserole place a layer of chips. Pour mixture over chips and place more chips on top. Bake at 350 degrees for 30 to 40 minutes. (can make up ahead, but don't put chips on top of casserole until ready to bake). Sprinkle with grated cheese last 5 minutes of baking.
