GREEN TOMATO MINCE MEAT 
1 peck green tomatoes
10 apples
4 lbs. brown sugar
1 lb. chopped meat, sort of on the suet side
1 tbsp. cinnamon
1 tbsp. allspice
1 tbsp. cloves
1 tsp. ginger
1 tsp. nutmeg
2 lbs. raisins

Cut tomatoes up the night before and sprinkle with salt. Drain in the morning. Seed and quarter apples and grind with tomatoes. Add raisins and other ingredients and 1 cup white vinegar. Boil about 1 1/2 hours slowly until thick. Can and seal at once. Makes 6 to 7 quarts.
