GRANDMA GUERINA BERRA'S BAKED
CHICKEN
 
1 dressed chicken (from 6 months to 1 year old)

Chicken should weigh from 3 1/2 to 4 pounds. Singe the chicken by holding it over a gas flame. Remove the pin feathers and cut the oilbag from the tail. If the chicken has not been drawn, remove the entrails. Then wash carefully. Wipe inside with damp cloth; dry thoroughly.

Sprinkle inside with salt. Rub with unsalted fat or oil. Place breast up on rack in roaster. Bake at 325 degrees uncovered for 30 minutes per pound of chicken. If very tender chicken is preferred, it should be covered for the latter part of cooking.
