SKILLET LASAGNA 
1 lb. turkey sausage, frozen (substitute Italian sausage, no seasoning)
1 c. green peppers, chopped
1 c. onions, chopped
2 (4 oz.) cans mushrooms, drained
1 clove garlic, minced
Salt and pepper to taste
1 to 2 tsp. Italian seasoning
2 (14 1/2 oz.) can tomatoes, crushed
8 c. zucchini, sliced
4 oz. Mozzarella cheese

Use just enough oil to coat bottom of pan. Brown together sausage, onions, green peppers, mushrooms, and garlic. (If you have used Italian sausage you may have to drain grease off.) Add crushed tomatoes. Cook for 15 to 20 minutes.

In a 5-quart Dutch oven or a wok, put in zucchini and add meat mixture. Cook until zucchini is tender. Add 4 oz. Mozzarella cheese. Stir until cheese is melted. Sprinkle with 1 teaspoon of Parmesan cheese on each serving.
