SWISS OVEN OMELET 
8 slices cooked bacon
1/3 c. onion, finely chopped
10 eggs
1 1/8 c. milk
2 tsp. salt
1/4 tsp. pepper
2 tbsp. chopped parsley
8 oz. Swiss cheese, grated

Cook onion in bacon fat. Combine eggs, milk, salt and pepper and beat. Add onion and parsley. Pour into 1 1/2 quart casserole. Add cheese. Top with crumbled bacon. Bake at 350 degrees for 40 minutes.
