TAMALE PERFECTION 
1/2 lb. pork sausage
1 1/2 lbs. ground beef
3/4 c. chopped celery
3 c. tomatoes, sliced
1 1/2 tbsp. salt
1/2 tsp. pepper
1 1/2 c. salad olives
2 tbsp. cold water
1 1/2 c. chopped onion
2/3 c. green peppers
1 1/2 c. whole corn, drained
3 tsp. chili powder
3/4 c. yellow corn meal
1 c. sharp grated cheese

Place sausage in large heavy cold skillet. Add 1 1/2 tablespoons of water. Cover and cook slowly for 8 minutes. Pour off fat. Mix in ground beef. Brown over medium heat; pour off fat.

Mix onion, celery and green peppers; cook until onion is transparent. Add corn and tomatoes. Mix together and add salt, chili powder and pepper. Mix 1 1/3 cups water and corn meal; add to skillet. Stir occasionally. Add olives. Bake 1 hour at 350 degrees. Remove from oven and add cheese and ripe olives and sprigs of parsley, if desired.
