CHAMBORD FRUIT SALAD 
1 fresh pineapple, peeled, cored & cubed
1 qt. fresh strawberries, cleaned & de-stemmed
1/2 c. fresh blueberries
1/2-1 c. fresh raspberries
1 sm. can mandarin oranges, drained

DRESSING:

1 1/2 c. orange juice (from frozen concentrate)
1/2 c. sugar
1/4 c. Chambord liqueur (or other raspberry liqueur)
1/2 tsp. almond extract
1/2 tsp. vanilla extract

Combine fruits in large bowl. Combine dressing ingredients and stir until sugar dissolves. Pour dressing over fruit and toss lightly. Chill at least 1 hour. Serves 12 to 15. (You could make this without the Chambord, but then it would be ordinary, so why bother?!)
