ZUCCHINI AND PEPPER PIZZA 
1 pkg. pizza dough
1 zucchini, shredded
1 red pepper, chopped fine
2 tbsp. olive oil
1/2 tsp. thyme
1 c. shredded Mozzarella cheese
2 tbsp. Parmesan cheese
2 cloves garlic, minced
Cornmeal
Vegetable oil spray

Preheat oven to 450 degrees. Spray cast iron skillet with vegetable spray and sprinkle with cornmeal to lightly coat.

Press dough into skillet to cover bottom and partially up sides. Bake for 10-12 minutes.

Meanwhile, saute garlic and red pepper in another skillet on top of stove for 5 minutes. Add zucchini and thyme and saute 5 more minutes, stirring frequently. Sprinkle crust with Mozzarella cheese. Top with zucchini mixture. Sprinkle with Parmesan. Bake for 5-10 minutes.
