ZUCCHINI PIZZA 
3 c. thinly sliced zucchini
1 c. whole wheat flour
2 tsp. baking powder
1/2 c. finely chopped onion
1/2 c. grated Parmesan cheese
2 tbsp. parsley flakes
1/2 tsp. salt
1/2 tsp. oregano
Dash of pepper
2 dashes garlic powder
1/2 c. oil
4 beaten eggs

Combine all ingredients. Spread in a greased 9x13x2 inch pan. Bake at 350 degrees for 20 minutes. Remove from oven and top with tomato sauce, cooked hamburger, mushrooms, or your choice. Top with grated cheese. Return to oven for 5-10 minutes or until cheese melts. Crust can be served warm or cold without a topping if baked for 25 minutes.
