ZUCCHINI PIZZA 
4 c. shredded zucchini, unpeeled
1 c. chopped onion
2 tbsp. butter
2 tbsp. snipped parsley
1/2 tsp. pepper
1/4 tsp. garlic powder
1/4 tsp. dried basil
1/4 tsp. oregano
2 Robin Hood pizza crusts
4 beaten eggs
2-3 c. shredded Mozzarella cheese
1 pkg. Jimmy Dean pork sausage
Parmesan cheese

(Or substitute 1 1/2 teaspoons Italian pizza seasoning).

Brown sausage, set aside. Cook zucchini and onion until tender. Add seasonings. Cook uncovered over low heat until most of the liquid is evaporated. Cool slightly. Meanwhile prepare pizza crust according to directions. Press dough into a greased jelly roll pan, forming edges.

Bake at 375 degrees for 10 minutes. Combine eggs, Mozzarella cheese and sausage. Stir in zucchini mixture. Spread on crust. Sprinkle with Parmesan cheese. Bake uncovered for 20-25 minutes or until cheese is golden. Use as a main dish or appetizer.
